NDFS 445 Food Service Systems
Work Place Environment and Employee Retention
Employee retention is a major concern to the food service industry. Food service organizations are commonly plagued with high employee turnover, which can cost even small operations thousands of dollars. In order to better understand what employers can do to combat high turnover rates, I read articles from trade journals about the relationship between the work environment and employee retention. I summarized my findings in this paper.

Kitchen Layout and Design
Kitchen design affects many aspects of work efficiency. For this assignment, I worked with three other students to redesign an existing kitchen at a local nursing home to improve employee and food flow through the kitchen to maximize work efficiency.

Theme Day Promotion
One of the ways that food service operations can actively improve employee and customer satisfaction is by having theme days. For this assignment, I worked with three other student to plan a theme day for a local nursing home. We chose the theme of Celebrating the Americas, and featured food items from North, South, and Central America in our menu. We also prepared a presentation to promote this theme day.

Many new managers do not train to be in leadership positions, but find leadership thrust upon them. For this assignment, I worked with five other student to research management theories and organize our findings into a handbook that managers can use to improve their leadership abilities.

Of all the controls set up in an organization, the budget is the most important one. For this assignment, I worked with 3 other student. Together, we took a hypothetical hospital that had fallen into financial failure and designed a budget to help get the hospital out of the red and back in black.
